If you’ve been reading this blog for a little while, you’ll know my prowess in the kitchen leaves a lot to be desired. Especially when it comes to baking. There’s just something about the combining of flour, sugar and eggs that leaves me sweaty, flustered and lacking anything remotely resembling a cake.

But, like everyone else in the UK at the moment, I’ve become obsessed with The Great British Bake Off. So when Waitrose invited me to recreate a ‘traditional British dish’, I thought it’d be a great opportunity to master the art of cake making.

I decided to try my hand at a classic Victoria Sponge with a late-summer twist – plums. I absolutely love plums and they’re so juicy at this time of year. Plus, my friend Lil has a purple KitchenAid that I was dying to borrow, so my colour scheme was predetermined. And because I’m not particularly skilled in presentation, I wanted to try a ‘naked cake’ with no icing and a bit of a messy finish. Perfect for a baking beginner!

I used Mary Berry’s simple sponge recipe to make enough mixture to split between two small cake tins. For this you’ll need:

225g self-raising flour
225g caster sugar
225g butter
4 eggs
2 tsp baking powder

Combine all the ingredients and mix until smooth. Told you it was simple!

The cakes need about 25 minutes in the oven at 180 degrees. While they’re cooking, you can start on the cream filling. I’m not a big fan of buttercream so I used a mascarpone version instead. For this you’ll need:

250g mascarpone
2 tbsp icing sugar
1 tsp vanilla extract

Again, it’s just a simple combination of the three. Make sure you don’t whisk the mixture too much, though. Now prep your plums!

Slice your plums into similarly-sized wedges and set them aside ready for cake assembly. When your cakes are done (stick a fork in the centre and if it comes out clean, you’re good to go), leave them to cool completely, then slice each cake so you have four thin cakes in total. Now you’re ready to put everything together! For this bit you’ll need:

Plums
Redcurrants
Jar of plum (or similar – I used Damson) jam
Your mascarpone filling
Icing sugar (to dust)

Spread a thin layer of jam on your first cake, then top it with the mascarpone filling. Arrange your plum slices in a fan shape, then place your next cake on top. Repeat three times until you have just one cake left, and pop this on the top! It’ll probably look a bit wonky and messy, but that’s ok. Give it some finesse by adding more plums to the top, scattering some redcurrants about and sprinkling with icing sugar.

Ta-dah!

Ok, so it won’t win any awards and I’m pretty sure Mary Berry would give me short shrift, but I love it. It looks so undone and pretty – perfect for plonking on the table at a late-summer garden party. And it tastes delicious, too!

I’m a sucker for old school branding. The only part of my degree I actually remember now, 7 years on, is a module on vintage advertising. Those classic ads for Pears Soap, Volkswagen and Marlboro will stay with me forever – the sign of a truly brilliant marketing campaign.

The 50s and 60s are known as the golden age of advertising, and for good reason – many companies that are still prevalent today created their iconic branding in these decades. Although the Coca-Cola logo has existed pretty much as is since 1887, the instantly-recognisable white ribbons were added in 1969 and the branding has remained unchanged ever since.

I can never resist a faux-faded tee with a bit of classic branding. I picked up this Coca-Cola style to wear around the house but soon realised it was the perfect partner for my new skirt, sent to me by the lovely people at Hobbs.

I mentioned in this post that I was looking for a high-waisted, flared skirt in navy to match the black and white versions I already own. Obviously Hobbs were paying attention (full marks to them) as this beauty was soon winging its way to me. It’s made from the most gorgeous wool/silk mix, heavy enough to hang perfectly but with plenty of twirling potential.

Teamed with my faded brand tee, leopard print courts and boxy MK bag, it has that 1950s Americana style that I love so much.

A Hen Do Weekend in Keswick

A few weeks ago, I headed up to the Lake District for my lovely friend Laura’s hen do.

As Laura is a big fan of all things outdoorsy, the Lakes – Keswick specifically – was the perfect location for a hen do that was less L plates and shots, more hard hats and rock climbing. Although we did tear up Keswick’s one and only nightclub and stumble home at 2.30am, as is hen do tradition.

We stayed in an absolutely beautiful house just outside Keswick’s town centre which was the perfect base for exploring. I’d never been to Keswick before, so I took 30 minutes to wander round and snap some shots of our surroundings. Those rolling hills give everything such an amazing, dramatic feel!

Our main activity for the weekend was the Via Ferrata mountain climbing experience. Yep – we climbed a mountain. Fleetwith Pike, to be exact. Via Ferrata is Latin for ‘iron way’, and the mountain is punctuated with iron railings to help you along. We made our way up first, then after a quick lesson in caribiner etiquette (never, ever unclip them both together or you may fall to your death… reassuring), we headed down, around a corner suspended hundreds of feet above the ground (terrifying), across and then up an overhanding ladder which was a real workout for my puny upper arms.

After a quick and horrifying walk across a rusty steel bridge with no handrail and a clamber up a mountainside covered in loose slate, we took a shortcut through a pitch black cave and emerged at the top of the world.

I’m not much of an outdoor adventurer and tend to only do these kind of things when chivvied on by this particular group of friends, but despite being absolutely terrified during the climb the feeling of exhilaration at the top was overwhelming. The views went on for miles and the scenery was just spectacular. As a group we carried each other, sharing words of support and yelling encouraging cheers every time someone made it to the top. It was such an amazing experience, especially for a hen do where not everyone knows each other – we all bonded especially quickly after helping each other up and down a mountain!

Of course, we did some rather more glamorous activities too – like a Roaring Twenties dance class (represented in gif form above), a French-themed Murder Mystery and drinking pitchers of Pimm’s in the sunshine.  There was also a Brownies theme, a rousing game of miniature golf, plenty of dancing and a willy cake. What a great weekend!

Healthy Courgette Spaghetti (‘Courgetti’) Recipe

I’ve been dipping in and out of the 5:2 Eating Plan for about a year now. Initially I lost 1.5 stone, then I relaxed a bit and just enjoyed all the food. For the past few months I’ve been dabbling with 5:2 again – not particularly to lose weight but to try embrace a healthier lifestyle. Alongside the eating plan I’ve also been doing ballet, pilates and a bit of running, all of which make me feel a million times better and happier than sitting on the sofa eating pizza. Although I still do the latter quite often.

The thing about 5:2, though, is it gets really boring. You develop a routine of meals that you know fit into your 500 cal allowance and just cycle through them week after week. As someone who loves food but isn’t particularly skilled in the kitchen, I found myself craving more complex tastes but not really having any idea of how to make them healthily. So I did myself a solid and bought a Spiralizer.

A Spiralizer is a mind-blowing little gadget that turns vegetables into pasta. Stay with me on this. You wedge your veg (this should be their official strapline, I know) into what looks like an old-timey clothes dryer, turn the handle and your chosen blade will slice, dice or spiralize your veg into perfect pieces. AMAZING.

I’ve only had my Spiralizer a week or so and it’s already revolutionised mealtimes in the Allison household. I’m a huge fan of comforting, carby pasta dishes and as they’re so quick and easy to cook, it’s pretty much all we live on when life is busy. By replacing actual spaghetti with this ‘courgetti’, the calories are instantly slashed and my favourite hearty dishes fit nicely into my fasting days.

Not convinced? Here’s a recipe so simple you could do it with your eyes closed. Although don’t, because you might slice your fingers off.

First, spiralize your chosen veg so you’ve got a nice bowlful as shown above. Courgettes, carrots, sweet potatoes and aubergines work best as they’re long and thin so lend themselves nicely to spaghetti-style spirals. Next, gather whatever you’ve got lurking in the vegetable crisper – I found a green pepper and a red chilli – and chop them up along with a shallot, some ripe tomatoes and a few cloves of garlic. Then, locate some cheese (I went for parmesan) and a tin of chopped tomatoes.

Add your onions and garlic to a big pot with a splash of oil or Fry Light. My big pot is from Le Creuset – bought at my lovely friend Lil’s cookery demonstration a few weeks ago – and used for cooking literally everything.

Cook your onions and garlic until brown, then throw in the rest of your veg and the chopped tomatoes. Simmer until the sauce begins to thicken, then add some seasoning – I used salt, pepper, some dried chilli flakes and a bit of oregano. Give it a taste and tweak until you’re happy, then add your spiralized veg and give it a stir.

When you’re happy with the sauce-to-spiral ratio, plonk your big pot on the table (on a heatproof mat, obviously) and dish out some bowls so your guests can feed themselves. I’m a big fan of doing as little as possible when it comes to cookery!

When served, sprinkle some grated cheese over the top and dig in.

This whole recipe takes around 20 mins to prep, cook and serve. The vegetable spaghetti is crunchy and fresh and has none of the heaviness of wheat spaghetti, but is still bursting with flavour. It’s the perfect meal to serve before heading out for the night or exercising as it’s so light and nutritious, and I worked this out at about 190 calories. Good stuff!

Is It Autumn Yet?

It’s always the same – as late-August approaches, I start dreaming of autumn. It could be 30 degrees outside (although it definitely is not today) and I’ll still be gazing longingly at my knitwear pile and wondering if a hot chocolate would be entirely inappropriate.

It’s not that I dislike summer – I love the warm weather, the flippy sundresses and, of course, the ice cream – but I just love autumn so much more. Close your eyes with me now and dream of roaring fires, crunchy leaves, knitted socks and bobble hats… perfection, amirite?

There’s a little pocket of time, from mid-September to the end of October, when the weather is at its best. It’s often sunny but with just enough chill to warrant a jacket and maybe a light scarf. The leaves are turning and there’s the promise of fresh starts and new winter coats in the air. It’s my absolute favourite time of year and I relish it every season.
